Ingredients:
For the Saag:
Mustard leaves (sarson) – 4 cups (chopped)
Spinach (palak) – 2 cups (chopped)
Bathua (optional) – 1 cup (chopped)
Turnip (shalgam) – 1 small, chopped (optional)
Green chilies – 2-3
Ginger – 1-inch piece (grated)
Garlic – 5-6 cloves (chopped)
Makki ka atta (cornmeal) – 2-3 tbsp
Salt – to taste
Water – as required
For the Tempering (Tadka):
Ghee or mustard oil – 2-3 tbsp
Onion – 1 medium (finely chopped)
Tomato – 1 medium (chopped)
Garlic – 4-5 cloves (finely chopped)
Dry red chilies – 1-2
Cumin seeds (jeera) – 1 tsp
Red chili powder – ½ tsp
Garam masala – ½ tsp
Instructions:
1. Prepare the Saag:
Wash and clean the mustard leaves, spinach, and bathua thoroughly.
Boil the chopped greens along with turnip, green chilies, garlic, and ginger in a large pot with 1-2 cups of water for 30-40 minutes until tender.
Mash the boiled greens using a hand blender or masher until smooth.
Add cornmeal to the saag and cook for another 15-20 minutes, stirring occasionally to avoid lumps.
2. Make the Tempering:
Heat ghee or mustard oil in a pan.
Add cumin seeds, dry red chilies, and chopped garlic; sauté until fragrant.
Add onions and cook until golden brown.
Stir in tomatoes, red chili powder, and garam masala; cook until the tomatoes soften and the oil separates.
3. Combine and Serve:
Pour the tempering over the cooked saag and mix well.
Let it simmer for another 5-7 minutes to combine the flavors.
Serving Suggestions:
Serve hot with Makki ki Roti, a dollop of butter, and some jaggery on the side for an authentic Punjabi experience.
