Besan ka chilla banane ke liye
**Samagri:**
- Besan (gram flour): 1 cup
- Pani (water): 1/2 cup (sath hi jarurat ke anusar)
- Namak: Swadanusar
- Lal mirch powder: 1/4 chammach
- Haldi powder: 1/4 chammach
- Ajwain: 1/2 chammach
- Hari mirch, kati hui: 1 badi
- Adrak, kati hui: 1 chammach
- Tamatar finely chopped (optional)
- Water, as needed (approximately 3/4 cup)
- Oil or Ghee, for cooking
### Instructions:
1. **Prepare the Batter:**
- In a mixing bowl, add besan, chopped onions, tomatoes (if using), green chilies, fresh coriander leaves, cumin seeds, turmeric powder, and salt.
2. **Mix Well:**
- Gradually add water while whisking to form a smooth batter without any lumps. The consistency should be like pancake batter, neither too thick nor too runny.
3. **Rest the Batter:**
- Let the batter rest for about 10-15 minutes. This allows the besan to absorb water and ensures a smoother texture.
4. **Heat the Griddle or Pan:**
- Heat a non-stick griddle or a frying pan over medium heat. Once hot, reduce the heat to medium-low.
5. **Cook the Cheela:**
- Pour a ladleful of batter onto the griddle and spread it gently with the back of the ladle to form a thin circle (like a pancake). Drizzle a little oil or ghee around the edges.
6. **Cook Until Golden:**
- Cook for 2-3 minutes on medium-low heat until the bottom side turns golden brown and crisp.
7. **Flip and Cook:**
- Flip the cheela carefully using a spatula. Cook the other side for another 2-3 minutes until it is cooked through and golden brown.
8. **Serve Hot:**
- Transfer the cooked cheela to a plate. Repeat the process with the remaining batter. Serve besan ka cheela hot with green chutney, yogurt, or any dip of your choice.
### Tips:
- You can add grated vegetables like carrots or spinach to the batter for added nutrition and flavor.
- Adjust the amount of water to get the right consistency of the batter.
- Cooking on medium-low heat ensures that the cheela cooks through without burning.
- Besan ka cheela is best enjoyed fresh and hot off the griddle.
