Description
Recipe for Bhature, the popular deep-fried bread often enjoyed with chole (chickpea curry) in North Indian cuisine:
Ingredients
2 cups all-purpose flour (maida)
1/2 cup plain yogurt (curd)
1/4 cup warm water (adjust as needed)
1 teaspoon sugar
1 teaspoon active dry yeast
1/2 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons ghee or oil (for the dough)
Oil for deep frying
Instructions
1. Prepare the Yeast Mixture:
In a small bowl, dissolve the sugar in warm water. Sprinkle the yeast over the water and let it sit for 5-10 minutes, or until it becomes frothy.
2. Make the Dough:
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt.
Add the yogurt and ghee (or oil) to the flour. Mix well to combine.
Pour in the yeast mixture and mix to form a soft dough. Adjust the amount of water as needed to achieve a smooth and slightly sticky dough.
3. Knead and Rest:
Knead the dough for about 5-7 minutes until it is smooth and elastic.
Cover the dough with a damp cloth or plastic wrap and let it rise in a warm place for about 1-2 hours, or until it doubles in size.
4. Shape the Bhature:
Punch down the risen dough and divide it into 8-10 equal portions.
Roll each portion into a ball and then roll it out into a circle about 6-8 inches in diameter. If the dough sticks, lightly flour the rolling surface.
5. Fry the Bhature:
Heat oil in a deep frying pan or kadai over medium heat. The oil should be hot but not smoking.
Carefully slide one bhature into the hot oil. Press it gently with a slotted spoon to help it puff up.
Fry until the bhature turns golden brown and crispy, turning it once or twice for even cooking.
Remove the bhature with a slotted spoon and drain excess oil on paper towels.
6. Serve:
Serve the hot bhature with chole, pickles, and yogurt, or enjoy them on their own.
Bhature is a delightful, puffed bread that complements spicy chickpea curry perfectly. Its soft and airy texture, combined with a crispy exterior, makes it a favorite in Indian cuisine. Enjoy your homemade bhature! .
