Ingredients
1 large eggplant (baigan)
2 tablespoons mustard oil (or any cooking oil)
1 large onion, finely chopped
2 medium tomatoes, finely chopped
2-3 green chilies, finely chopped
1 teaspoon cumin seeds (jeera)
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder (haldi)
1 teaspoon red chili powder
1 teaspoon coriander powder (dhania powder)
1/2 teaspoon garam masala
Salt to taste
Fresh coriander leaves, chopped (for garnish)
1 tablespoon lemon juice (optional)
Instructions
1. Roast the Eggplant:
Wash the eggplant and pat it dry. Make a few slits on its surface and insert a few garlic cloves (optional) for extra flavor.
Roast the eggplant directly over a gas flame or in an oven until the skin is charred and the flesh is soft. This gives it a smoky flavor.
Once roasted, let it cool slightly, then peel off the charred skin. Mash the flesh with a fork and set aside.
2. Prepare the Bharta:
Heat mustard oil in a pan until it starts to smoke lightly. Reduce the heat and add cumin seeds. Let them crackle.
Add the chopped onions and sauté until they turn golden brown.
Add ginger-garlic paste and sauté for another minute until the raw smell disappears.
Add the chopped tomatoes and green chilies. Cook until the tomatoes turn soft and the oil starts to separate from the mixture.
3. Add the Spices and Eggplant:
Add turmeric powder, red chili powder, coriander powder, and salt. Stir well to combine.
Add the mashed eggplant to the pan and mix everything together. Cook on medium heat for about 5-7 minutes, allowing the flavors to meld together.
Add garam masala and cook for another minute.
4. Final Touches:
Taste and adjust the seasoning if needed. If you prefer a tangy flavor, add a squeeze of lemon juice.
Garnish with freshly chopped coriander leaves.
5. Serve:
Serve your Chatpata Baigan Ka Bharta hot with roti, paratha, or rice. Enjoy the smoky, spicy flavors of this traditional dish! .
