Crispy French Fries at home!!
Ingredients
4 large potatoes (russet or any starchy variety)
1-2 cups vegetable oil (for frying)
Salt to taste
Optional seasonings: paprika, garlic powder, onion powder, black pepper, or any seasoning of your choice
Instructions
1. Prepare the Potatoes:
Peel the potatoes and cut them into thin, even strips (about 1/4 inch thick). You can use a knife or a mandoline slicer for uniformity.
Soak the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch. This step helps in making the fries crispy.
2. Parboil the Potatoes:
After soaking, drain the water and rinse the potatoes. Bring a pot of water to a boil, and parboil the potatoes for about 3-4 minutes. This will partially cook them and make them tender inside.
Drain the potatoes and spread them out on a kitchen towel or paper towels. Pat them dry to remove any excess moisture.
3. First Frying (Blanching):
Heat the oil in a deep frying pan or pot to about 325°F (160°C). If you don’t have a thermometer, test the oil by dropping in a small piece of potato; it should sizzle gently.
Fry the potatoes in small batches for about 3-4 minutes or until they are soft but not browned. This step cooks the fries without giving them color.
Remove the fries from the oil and let them drain on paper towels. Allow them to cool completely.
4. Second Frying (Crisping):
Increase the oil temperature to 375°F (190°C).
Fry the potatoes again in batches, this time for 2-3 minutes or until they turn golden brown and crispy.
Remove the fries from the oil and drain on fresh paper towels to remove excess oil.
5. Season and Serve:
Immediately sprinkle the hot fries with salt and any other seasonings you like (paprika, garlic powder, etc.).
Serve your crispy French fries hot with ketchup, mayonnaise, or your favorite dipping sauce.
