Fried Chana (Crispy Fried Chickpeas) Recipe
Ingredients
1 cup dried chickpeas (chana)
1/2 teaspoon turmeric powder (haldi)
1 teaspoon red chili powder
1/2 teaspoon chaat masala (optional)
1/2 teaspoon cumin powder (jeera powder)
1/2 teaspoon coriander powder (dhania powder)
Salt to taste
Oil for deep frying
Fresh coriander leaves for garnish (optional)
Lemon wedges (optional)
Instructions
1. Soak the Chickpeas: Rinse the dried chickpeas thoroughly under cold water.
Soak them in plenty of water overnight or for at least 6-8 hours until they double in size.
2. Prepare the Chickpeas: Drain the soaked chickpeas and pat them dry with a clean kitchen towel. The drier they are, the crispier they will be when fried.
3. Fry the Chickpeas:Heat oil in a deep frying pan over medium heat.
Once the oil is hot, carefully add the dried chickpeas in small batches. Fry them until golden brown and crispy, about 5-7 minutes per batch.
Use a slotted spoon to remove the fried chickpeas and drain them on paper towels to remove excess oil.
4. Season the Fried Chickpeas:
While the chickpeas are still hot, sprinkle them with turmeric powder, red chili powder, cumin powder, coriander powder, chaat masala (if using), and salt. Toss them well to coat evenly.
5. Serve:
Garnish with fresh coriander leaves and serve with lemon wedges on the side, if desired.
Enjoy your crispy fried chana as a snack, or use it as a crunchy topping for salads or chaat. .
