ngredients:
For the Paneer Koftas:
250g paneer (cottage cheese), grated
2 tbsp cornflour (or breadcrumbs)
1 boiled potato, mashed
1-2 green chilies, finely chopped
1 tsp garam masala
1 tsp cumin powder
1 tsp red chili powder
Salt to taste
Oil for frying
For the Gravy:
2 large onions, finely chopped
2 tomatoes, pureed
1 tsp ginger-garlic paste
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala
1 tsp coriander powder
½ cup cream or milk
2 tbsp oil or butter
Salt to taste
Fresh coriander leaves for garnish
Instructions:
For the Koftas:
In a large bowl, combine grated paneer, mashed potato, green chilies, garam masala, cumin powder, red chili powder, and salt.
Add cornflour (or breadcrumbs) to the mixture to bind it. Mix well to form a dough.
Shape the mixture into small round balls or koftas.
Heat oil in a pan for deep frying or shallow frying (your preference). Fry the koftas until they are golden brown and crispy. Set aside on a paper towel to drain excess oil.
For the Gravy:
Heat oil or butter in a pan. Add cumin seeds and let them splutter.
Add the chopped onions and sauté until golden brown.
Add the ginger-garlic paste and cook for another 1-2 minutes until the raw smell goes away.
Add the tomato puree and cook until the oil starts separating from the masala.
Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Cook for another 2-3 minutes.
Lower the heat and stir in the cream or milk, simmer for 4-5 minutes until the gravy thickens.
Add the fried koftas to the gravy and gently stir to coat them. Let it simmer for a couple more minutes to absorb the flavors.
Serving:
Garnish with fresh coriander leaves and serve hot with naan, roti, or rice!
