Description
Ghiya Ki Loj, a traditional Indian dish made with bottle gourd (lauki) in a mildly spiced, tangy yogurt-based gravy:
Ingredients
1 medium bottle gourd (lauki), peeled and cut into cubes
1 cup plain yogurt (curd)
2 tablespoons oil
1 teaspoon cumin seeds (jeera)
1/2 teaspoon mustard seeds (rai)
1/2 teaspoon fenugreek seeds (methi dana)
1 teaspoon ginger paste
1 teaspoon garlic paste
1 green chili, finely chopped (optional, for extra heat)
1/2 teaspoon turmeric powder (haldi)
1 teaspoon coriander powder (dhania powder)
1/2 teaspoon red chili powder
1 teaspoon sugar (optional, for a hint of sweetness)
Salt to taste
Fresh coriander leaves for garnish
Instructions
1. Prepare the Bottle Gourd:
Peel the bottle gourd and cut it into small cubes.
2. Cook the Bottle Gourd:
Heat oil in a pan or kadhai over medium heat.
Add cumin seeds, mustard seeds, and fenugreek seeds. Let them splutter.
Add ginger paste, garlic paste, and green chili (if using). Sauté for a minute until fragrant.
Add the bottle gourd cubes and cook for 5-7 minutes, stirring occasionally.
3. Prepare the Yogurt Mixture:
In a bowl, whisk the yogurt until smooth. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.
4. Combine and Cook:
Reduce the heat to low and add the yogurt mixture to the pan with the bottle gourd. Stir well to combine.
Cover the pan and let it cook on low heat for about 15-20 minutes, or until the bottle gourd is tender and the flavors have melded together. Stir occasionally to prevent the yogurt from curdling.
If you like a slightly sweet taste, add sugar at this stage.
5. Garnish and Serve:
Garnish with freshly chopped coriander leaves.
Serve Ghiya Ki Loj (loki ki barfii) hot with roti, paratha, or rice.
