Making a flavorful and aromatic vegetable biryani is a rewarding culinary experience. Here’s a step-by-step guide to making a delicious veg biryani:
Ingredients:
For the Rice:
1.5 cups Basmati rice (long-grain)
4 cups water
1-2 bay leaves
2-3 cloves
2-3 cardamom pods
1-inch cinnamon stick
Salt to taste
For the Vegetables:
1.5 cups mixed vegetables (carrots, peas, potatoes, beans, cauliflower)
1 onion, thinly sliced
1 tomato, chopped
2 green chilies, slit
1 teaspoon ginger-garlic paste
1/2 cup yogurt (curd)
1/4 cup mint leaves, chopped
1/4 cup coriander leaves, chopped
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
1/2 teaspoon biryani masala (optional)
Salt to taste
2 tablespoons ghee (clarified butter) or oil
For Layering:
A few saffron strands soaked in 2 tablespoons warm milk (optional)
2 tablespoons fried onions (optional)
1/4 cup chopped coriander and mint leaves
Instructions:
1. Cook the Rice:
Wash the basmati rice under running water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.
Boil 4 cups of water in a large pot. Add the bay leaves, cloves, cardamom, cinnamon stick, and salt.
Add the soaked and drained rice to the boiling water. Cook the rice until it is 70-80% cooked (the grains should be firm but not fully cooked). Drain the rice and set it aside.
2. Prepare the Vegetables:
Heat ghee or oil in a large pan. Add the sliced onions and sauté until they are golden brown.
Add the ginger-garlic paste and green chilies, and sauté for a minute.
Add the chopped tomatoes and cook until they soften.
Add the mixed vegetables, turmeric powder, red chili powder, garam masala, and biryani masala. Stir well.
Add the yogurt, chopped mint, and coriander leaves. Mix everything well and cook the vegetables on medium heat until they are tender. Add salt to taste.
3. Layer the Biryani:
In a large heavy-bottomed pot, start layering the biryani. Begin with a layer of the cooked vegetables, followed by a layer of the semi-cooked rice.
Sprinkle some saffron milk over the rice (if using), along with fried onions, and a handful of chopped coriander and mint leaves.
Repeat the layers until all the rice and vegetables are used up, finishing with a layer of rice on top.
4. Dum Cooking (Final Step):
Cover the pot with a tight-fitting lid. You can seal the edges with dough to prevent steam from escaping, or you can place a heavy object on the lid to keep it sealed.
Place the pot on a low flame and cook the biryani on "dum" (slow steam cooking) for about 20-25 minutes. You can place a griddle (tawa) underneath the pot to avoid direct heat.
5. Serve:
Once done, gently fluff the biryani with a fork to mix the layers.
Serve hot with raita, salad, or your favorite side dish.
