How to Make Crispy Special Puri at Home?? TEEJ SPECIAL PURI

Description
Crispy Special Puri, perfect for Teej or any festive occasion. These puris are crispy, fluffy, and a delightful addition to any meal:
Ingredients
2 cups all-purpose flour (maida)
1/4 cup semolina (rava/sooji)
2 tablespoons ghee or oil (plus extra for frying)
1/2 teaspoon carom seeds (ajwain)
1/2 teaspoon cumin seeds (jeera)
1/2 teaspoon sugar
1/2 teaspoon salt (adjust to taste)
Warm water, as needed
Instructions
1. Prepare the Dough:
In a large mixing bowl, combine the all-purpose flour, semolina, carom seeds, cumin seeds, sugar, and salt.
Add the ghee or oil to the flour mixture and rub it in with your fingers until the mixture resembles coarse crumbs.
Gradually add warm water and knead the mixture into a smooth, stiff dough. The dough should be slightly firmer than chapati dough. Cover it with a damp cloth and let it rest for about 15-20 minutes.
2. Roll Out the Puris:
Divide the dough into small balls, about the size of a golf ball.
On a lightly floured surface, roll out each ball into a small circle, approximately 4-5 inches in diameter. Keep the puris slightly thick to ensure they puff up well.
3. Heat the Oil:
Heat enough oil in a deep frying pan or kadhai over medium heat. To test if the oil is hot enough, drop a small piece of dough into the oil; it should come up to the surface and start bubbling.
4. Fry the Puris:
Gently slide one puri into the hot oil. It should puff up and float to the top. Use a slotted spoon to gently press down on the puri to help it puff up evenly.
Flip the puri and cook the other side until it turns golden brown and crispy.
Remove the puri with a slotted spoon and drain on paper towels to remove excess oil.
5. Serve:
Serve the crispy puris hot with your favorite curries, pickles, or as part of a festive meal.
