Kamal Kakdi with Perfect Onion Flavor Recipe
Ingredients
250 grams lotus stem (kamal kakdi), cleaned and sliced thinly
2 large onions, thinly sliced
2 tablespoons mustard oil (or any cooking oil)
1 teaspoon cumin seeds (jeera)
1 teaspoon mustard seeds (rai)
1/2 teaspoon turmeric powder (haldi)
1 teaspoon coriander powder (dhania powder)
1 teaspoon red chili powder
1/2 teaspoon garam masala
1 teaspoon ginger-garlic paste
1-2 green chilies, slit
1 teaspoon dried mango powder (amchur) or juice of 1 lemon
Salt to taste
Fresh coriander leaves for garnish
Instructions
1. Prepare the Lotus Stem:
Clean the lotus stem thoroughly under running water to remove any mud or dirt.
Peel the outer skin and slice the stem into thin, round pieces.
Boil the sliced lotus stem in salted water for about 10-15 minutes until tender. Drain and set aside.
2. Cook the Onions:
Heat mustard oil in a heavy-bottomed pan or kadai until it begins to smoke lightly. This enhances the flavor of the oil.
Add cumin seeds and mustard seeds to the hot oil. Let them splutter.
Add the thinly sliced onions and sauté them on medium heat until they turn golden brown and caramelized. This step is key to infusing the dish with a rich onion flavor.
3. Add Spices and Lotus Stem:
Add the ginger-garlic paste and slit green chilies to the onions. Sauté for a minute until the raw smell disappears.
Lower the heat and add turmeric powder, coriander powder, red chili powder, and salt. Stir well to combine.
Add the boiled lotus stem slices to the pan. Mix everything together so that the lotus stem is well-coated with the spiced onion mixture.
4. Cook and Finish:
Cover the pan and cook the mixture on low heat for about 10-15 minutes, stirring occasionally. This allows the lotus stem to absorb the flavors.
Add garam masala and dried mango powder (or lemon juice) towards the end of cooking. Stir to combine and adjust seasoning if needed.
Cook for another 2-3 minutes to let the flavors meld together.
5. Serve:
Garnish with fresh coriander leaves and serve hot with roti, paratha, or steamed rice.
