Description
Here's a traditional recipe for Khaman Dhokla, a popular steamed snack from Gujarat, India.
Ingredients:
1 cup gram flour (besan)
2 tablespoons semolina (sooji)
1 tablespoon lemon juice
1 tablespoon sugar
1 teaspoon salt (or to taste)
1/4 teaspoon turmeric powder
1 teaspoon fruit salt (Eno)
1 cup water
For Tempering:
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
2 green chilies, slit
10-12 curry leaves
A pinch of asafoetida (hing)
1 tablespoon sugar
1/2 cup water
2 tablespoons chopped fresh coriander leaves
2 tablespoons grated coconut (optional)
Instructions:
Prepare the Batter:
In a large mixing bowl, combine gram flour, semolina, lemon juice, sugar, salt, and turmeric powder.
Gradually add water to the mixture and whisk well to form a smooth batter. Make sure there are no lumps.
Let the batter rest for about 10-15 minutes.
After resting, add fruit salt (Eno) to the batter and gently mix. The batter will become frothy and light.
Steam the Dhokla:
Grease a steaming tray or thali with a little oil.
Pour the batter into the greased tray and spread it evenly.
Heat water in a steamer and place the tray inside. Steam for 15-20 minutes or until a toothpick inserted into the center comes out clean.
Once done, remove the tray from the steamer and let it cool for a few minutes.
Prepare the Tempering: In a small pan, heat oil over medium heat.
Add mustard seeds and let them crackle. Then add cumin seeds, green chilies, curry leaves, and a pinch of asafoetida. Sauté for a few seconds. Add sugar and 1/2 cup water to the pan. Stir well and bring it to a boil. Let it simmer for 1-2 minutes, then turn off the heat. Cut the steamed dhokla into square or diamond-shaped pieces. Pour the prepared tempering evenly over the dhokla pieces.
