Description
Meethe Chawal, a traditional sweet rice dish that’s often enjoyed during festivals and special occasions. This dish combines the sweetness of sugar with the aroma of saffron, cardamom, and the richness of ghee and nuts.
Ingredients
1 cup basmati rice
1/2 cup sugar (adjust to taste)
2 tablespoons ghee
1/4 cup mixed nuts (almonds, cashews, and raisins)
1/2 teaspoon saffron strands (optional)
1/2 teaspoon cardamom powder (elaichi)
2 cloves (laung)
1-inch cinnamon stick (dalchini)
2-3 green cardamom pods (crushed)
2-3 drops of yellow food color (optional)
2 cups water
Rose water or kewra essence (optional, for fragrance)
Instructions
1. Prepare the Rice:
Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 20-30 minutes.
After soaking, drain the water from the rice.
2. Cook the Rice:
In a deep pan, bring 2 cups of water to a boil. Add the soaked and drained rice to the boiling water.
Add the cloves, cinnamon stick, and crushed green cardamom pods to the water.
Cook the rice on medium heat until it's about 90% cooked (the grains should still be slightly firm).
Drain any excess water and set the rice aside.
3. Prepare the Saffron and Nuts:
If using saffron, soak the saffron strands in 2 tablespoons of warm milk. Set aside.
Heat 1 tablespoon of ghee in a small pan. Add the mixed nuts and sauté them until golden brown. Remove and set aside.
4. Combine and Cook:
In the same pan where you sautéed the nuts, add the remaining ghee. Add the partially cooked rice.
Sprinkle the sugar over the rice. Pour the saffron milk (if using) and mix gently.
Add the cardamom powder and yellow food color (if using). Mix everything carefully, ensuring the rice grains don’t break.
Cover the pan with a tight-fitting lid and cook on low heat for about 10-15 minutes. This allows the sugar to dissolve and the flavors to meld together.
5. Final Touches:
Once the rice is cooked and the sugar is absorbed, fluff the rice gently with a fork.
Add the sautéed nuts and raisins, and a few drops of rose water or kewra essence if desired.
6. Serve:
Serve the Meethe Chawal warm, garnished with additional nuts if you like.
