Ingredients:
1 cup sabudana (sago/tapioca pearls)
2 medium potatoes (boiled and diced)
1/2 cup roasted peanuts (coarsely ground)
1–2 green chilies (chopped)
1 tsp cumin seeds
1 tbsp ghee or oil
Salt to taste (use sendha namak for fasting)
A few curry leaves (optional)
Fresh coriander leaves (chopped)
Lemon juice (optional)

Instructions:
1. Soak the Sabudana:
Wash sabudana thoroughly.
Soak in water (just enough to cover it) for 5-6 hours or overnight.
Drain excess water and fluff with a fork.
2. Prepare the Khichdi:
Heat ghee or oil in a pan.
Add cumin seeds and let them splutter.
Add chopped green chilies and curry leaves.
Add diced boiled potatoes and sauté for 2–3 minutes.
Add the soaked sabudana and stir well.
Add salt and ground peanuts. Mix gently to avoid sticking.
Cook on low flame for 5–6 minutes until sabudana turns translucent.
3. Finish:
Garnish with chopped coriander and a squeeze of lemon juice.
Serve hot!
