Ingredients:
1 cup Sabudana (tapioca pearls), soaked overnight
2 medium-sized boiled potatoes, mashed
2-3 tbsp roasted peanuts, coarsely ground
1-2 green chilies, finely chopped
1 tsp cumin seeds
1 tsp black pepper powder
1 tbsp fresh coriander leaves, chopped (optional)
Salt to taste (or sendha namak for fasting)
Oil for frying
Instructions:
Prepare the Mixture:
In a mixing bowl, take the soaked sabudana (make sure to drain the excess water).
Add the mashed potatoes, coarsely ground peanuts, chopped green chilies, cumin seeds, black pepper powder, coriander leaves, and salt.
Mix everything well until you get a soft dough-like consistency.
Shape the Pakodis:
Take a small portion of the mixture and shape it into small, flat rounds or balls (pakodi shape). Repeat for the remaining mixture.
Fry the Pakodis:
Heat oil in a deep frying pan over medium heat.
Once the oil is hot, carefully drop the shaped pakodis into the oil. Fry until they turn golden and crispy on all sides. This should take around 5-6 minutes.
Serve:
Remove the pakodis from the oil and drain excess oil on a paper towel.
Serve hot with a side of green chutney or yogurt. .
