Ultimate Sambar Recipe: Authentic South Indian Delight

Ingredients:
For the Sambar:
1 cup Toor dal (split pigeon peas)
1 medium-sized onion, chopped
1 large tomato, chopped
1-2 green chilies, slit
1 medium carrot, chopped
1 small eggplant (brinjal), chopped
1 small potato, chopped
5-6 okra (bhindi), cut into pieces
1 drumstick (moringa), cut into 2-inch pieces (optional)
1/4 tsp turmeric powder
1 tbsp Sambar powder (store-bought or homemade)
1 tsp tamarind paste (or small lemon-sized tamarind soaked in warm water)
2-3 cups water
Salt to taste
For Tempering (Tadka):
2 tbsp oil (preferably coconut oil or vegetable oil)
1 tsp mustard seeds
1/2 tsp cumin seeds
1/4 tsp asafoetida (hing)
10-12 curry leaves
2 dry red chilies
1/2 tsp fenugreek seeds (methi seeds)
1 medium onion, sliced (optional, for extra flavor)
Fresh coriander leaves, chopped (for garnish)
Instructions:
1. Cook the Toor Dal:
Rinse 1 cup of Toor dal under running water until the water runs clear.
Add the dal to a pressure cooker with 2-3 cups of water and 1/4 tsp of turmeric powder.
Pressure cook for 3-4 whistles until the dal is soft and fully cooked. Mash the dal and set it aside.
2. Prepare the Vegetables:
While the dal is cooking, prepare the vegetables. Wash and chop the carrot, eggplant, potato, okra, and drumstick (if using).
In a large pot, heat 2 cups of water. Add the chopped vegetables and cook until they are soft but not mushy.
Add chopped onions, tomatoes, and green chilies to the vegetables and cook for another 5 minutes until the tomatoes are soft.
3. Make the Sambar Base:
Add the mashed dal to the pot with the cooked vegetables.
Add 1 tbsp of Sambar powder and 1 tsp of tamarind paste (or the soaked tamarind water, strained) to the pot.
Mix everything well and bring it to a boil. Let it simmer for 10-15 minutes, allowing the flavors to meld together. Adjust the consistency by adding more water if needed.
Add salt to taste and continue to simmer for a few more minutes.
4. Prepare the Tempering (Tadka):
In a small pan, heat 2 tbsp of oil over medium heat.
Add 1 tsp of mustard seeds and let them splutter.
Add 1/2 tsp of cumin seeds, 1/4 tsp of asafoetida, and 1/2 tsp of fenugreek seeds.
Add 10-12 curry leaves and 2 dry red chilies. Sauté for a few seconds.
(Optional) Add sliced onions to the tempering for extra flavor and sauté until golden brown.
Pour the tempering over the simmering Sambar and mix well.
5. Garnish and Serve:
Garnish the Sambar with freshly chopped coriander leaves.
Serve hot with steamed rice, idli, dosa, or vada.
